Manchego cheese
Manchego cheese is the name given to
the cheese elaborated in the region of La Mancha, situated
in the geographic centre of Spain, from milk of sheep
of the race "manchega ", with a minimum period
of maturation of 60 days " The manchego cheese
«is elaborated with some pasteurized sheep’s
milk.
«Manchego cheese " is the
result of a hard climate and extreme temperatures, which
encourage the development of very rustic vegetation,
the food of a curious and ancestral race of sheep. These
are subjected to very strict morphological and sanitary
controls.
