The gastronomy of Navarra is,
as the land itself and the people who take charge
of it, rich and varied. The gastronomy is culture
and the culture results from people, it has
to remain faithful to its land. From the Pyrenees
to the Ribera, Navarra offers one thousand different
faces, and its gastronomy also.
Magnificent raw material,
excellent culinary modes, balances between yesterday
and today... The gastronomy of Navarra, deserves
certainly a visit. And of all this rich offer,
two products are the stars: The peppers "del
piquillo of Lodosa " and the asparaguses
with certification of origin.

Peppers del Piquillo de Lodosa
are ones of the most representative products
of the navarran gastronomy and they have lately
acquired an almost mythical prestige.

Although
the pepper is a plant native of South America,
the piquillo of Lodosa belongs to a singular,
autochtonous and unique botanical variety
in its kind, wich reaches its maximal degree
of gustative quality in the geographic region
which carries its name (Lodosa) and the
neighbouring municipalities. |
Elaboration
After the harvest, which is
manually made and in a selective way, between
the end of September and November, peppers are
roasted. Later they will be very carefully peeled,
without being washed in the water, nor plunged
into any chemical solution. Finally, they will
be packaged in absolute aseptic conditions,
to reach to the final consumer in the best conditions.
Once at the table, they will
harmonize in perfection with the cod, the tuna,
the "chipirones" (small fried squids),
or the anchovies. They heighten in a very special
way egg dishes, go very well with rice, potatoes
and pastas and are convenient for the fragility
of puff pastry. Lastly, they play a magnificent
role when accompanying meat.
Organoleptiques
characteristics and nutritional values
Peppers del piquillo of Lodosa
possess a turgescent texture, without being
hard. They are characterized by an intense,
full, slightly sweetish flavour, without sourness
and with a reminder of smell of roasted meat.
Fleshy and delicate, in their characteristic
flavour, they reveal the care and the meticulousness
with which they are prepared.
